“The winter menu lingered on semi-exotic meats like quail (with Brussels sprouts and saba, a sweet syrup made from grape must) and pork belly (with chickpeas and anise cream), but also featured well-turned seafood: trout served moist and caramel brown, and a alight-handed razor clam chowder that made a sensuous bath for sweet seared diver scallops. Stevenson is a talent well worth nurturing.”
